Turque Madame

I’m sorry I really wanted a good croque madame turkey pun or name combo and I don’t know if it was worth it. Anyway I took some croque madame recipes and basically substituted in all Thanksgiving leftover ingredients. I’ve seen some other really cool ideas out there, like leftovers ramen (which I assume also uses the turkey carcass) and leftover dumplings. Hopefully everyone put the carcass in the freezer so you can make stock with it later and get all those little bits of meat off to make a fun soup. I’m probably going to try the ramen, but I need a break from any complex cooking so I’m going with what is essentially elevated grilled cheese. I’m even going to use the bread that was extra after making cubes for stuffing.

Just to be clear this is a real fork and knife sandwich, not a pick it up with your hands sandwich. If you’re feeling like this is a bit heavy for right after Thanksgiving might I suggest some arugula with lemon and olive oil as a refreshing side salad that will definitely offset the fact that you’re basically adding cheese to Thanksgiving dinner here.

Turque Madame Recipe

Ingredients

  • 1/2 cup gravy
  • 6 ounces gruyere or other good melting cheese, grated
  • Cooking spray or vegetable oil
  • 4 slices thick sandwich bread
  • 2 teaspoons red miso
  • 1/4 cup cranberry sauce
  • 4-8 slices cooked turkey
  • 2 tablespoons butter
  • 2 eggs

Instructions

  1. Preheat the broiler on low.
  2. Microwave the gravy for 45 seconds to a minute until warm but not bubbling. Mix in the grated cheese. This mix will be divided.
  3. Heat a cast iron pan over medium heat. Spray with nonstick spray or drizzle vegetable oil and toast each slice of bread on one side only. The toasted sides will face inward as you assemble the sandwich.
  4. Lay down two slices of bread, toasted side up. Spread a teaspoon of miso on each, followed by cranberry sauce. Top with slices of turkey and gravy cheese mixture, reserving a little less than half for topping the sandwich later. Add top bread with the toasted side facing inward.
  5. Add a tablespoon of butter to the cast iron and brown each sandwich on both sides, about two minutes. Transfer to a baking sheet or a piece of aluminum foil. Top each sandwich with half of the remaining gravy cheese mixture.
  6. Add nonstick spray or oil to the cast iron pan, and turn heat down to medium low. Fry 2 eggs to your preferred doneness. Meanwhile, place the sandwiches under the broiler and broil until the top is golden brown and bubbling, 1-5 minutes depending on your oven and distance from the broiler. Top each sandwich with a fried egg.
